Description
This rosé was created a few years to celebrate the birth of my daughter Allegra. It is made with the best Sangiovese grapes, then fermented (salasso) and put into another tank to continue the alcoholic fermentation. The result is a fresh, simple wine with a color that varies from year to year, sometimes tending to orange, some others to pink. Beside the dedication to my daughter, I wanted to create a wine that differs from all the others and that can let everybody know some of the characteristics and opportunities that may arise from our Sangiovese. The photo was taken by me in the vineyards, with a ladybug laying on a vine … Our natural and organic work allows the perfect environment for bees and ladybugs, that brings joy and represent my deepest wish for Allegra and for all those who believe in organic choices.
Grapes: Sangiovese 100%
Exposition: South – East
Soil: clayey with a medium texture
Vine training system: Tuscan arch and spurred cordon
Average yield per ha: 55-60 ql
Harvest: by hand in crates between the last week of September and the first of October.
Ripening: fermentation with indigenous yeasts in steel tanks (about 21 days) with a 1-day contact on the skins followed by a 20-days fermentation without skins (saignée).
Aging: steel tank
It goes well with: appetizers, cheeses and light meals, with seasonal vegetables and fish.
